Mac and Cheese Casserole Cups

Comment: Dairy products are essential in building strong, healthy bones. Often, kids don't like to eat dairy, so moms have to get creative. These mac and cheese "cupcakes" are a great way to combine dairy with fun presentation children will love
Ingredients:
3 cups skim milk
2 1/2 tbsps flour
1 1/2 cups shredded mild Cheddar cheese
1/2 cup grated Parmesan cheese
3/4 cup shredded mozzarella cheese
8 ounces elbow macaroni, cooked and drained
Method:
Preheat oven to 350 Fahrenheit. In a medium saucepan, pour 1 cup milk then slowly stir in flour until dissolved. Add remaining milk and stir. Place on stove and simmer 15 minutes, stirring occasionally until sauce thickens. Add 1 cup Cheddar. Stir in Parmesan and mozzarella until blended. Gently stir in macaroni until coated well. Line muffin tin with paper baking cups and place 1 scoop of mac and cheese mixture into each. Top with remaining Cheddar. Bake 15 minutes or until golden brown. Let cool 5 minutes and serve.
